Potato Roll Wash

Instructions
- Peel and cut the potatoes into chunks, cover with water, and cook until tender.
- Drain the potatoes, reserving some water, and mash them.
- Combine milk, potato water, butter, sugar, and salt in a bowl and microwave until melted.
- Let the mixture cool, then add yeast and eggs, whisking to combine.
- Mix in the mashed potatoes, then gradually add flour until a soft dough forms.
- Knead the dough for 6-8 minutes until smooth, then let it rise in a greased bowl for 1½ to 2 hours.
- Divide the dough into 14-16 pieces and shape into balls, placing them in a greased pan.
- Whisk together the egg and milk for the wash, and brush it over the rolls.
- Let the rolls rise for another 20-30 minutes.
- Bake in a preheated oven at 350°F for 15-20 minutes until golden brown.
- Brush with melted butter after baking and let cool slightly before serving.
