Ingredients

  • 2 ¼ teaspoons yeast
  • ½ cup warm water
  • ¾ cup shortening
  • ½ cup granulated sugar
  • 2 large eggs, beaten
  • 1 cup mashed potatoes
  • 1 cup scalded milk
  • 5 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons fresh rosemary, finely chopped

Instructions

  1. Dissolve the yeast in warm water and let it sit until bubbly.
  2. Mix sugar, shortening, and salt in a large bowl, then add the milk and one cup of flour.
  3. Incorporate the yeast mixture and beaten eggs, followed by mashed potatoes and rosemary, stirring well.
  4. Gradually add the remaining flour until a dough forms, then knead on a floured surface until smooth.
  5. Place the dough in a greased bowl and let it rise in a warm place until doubled in size.
  6. Punch down the dough and form rolls by pinching off pieces and rolling them into balls.
  7. Place three balls into each greased muffin tin and let them rise again until doubled.
  8. Bake at 375°F for 15-17 minutes until golden brown, then serve warm.
