Instructions
- Dissolve the yeast in warm water and let it sit until bubbly.
- Mix sugar, shortening, and salt in a large bowl, then add the milk and one cup of flour.
- Incorporate the yeast mixture and beaten eggs, followed by mashed potatoes and rosemary, stirring well.
- Gradually add the remaining flour until a dough forms, then knead on a floured surface until smooth.
- Place the dough in a greased bowl and let it rise in a warm place until doubled in size.
- Punch down the dough and form rolls by pinching off pieces and rolling them into balls.
- Place three balls into each greased muffin tin and let them rise again until doubled.
- Bake at 375°F for 15-17 minutes until golden brown, then serve warm.
