Potato Rolls

For baking
Instructions
- Dissolve yeast in warm water with a little sugar and let it rise for about 5 minutes.
- Scald the milk and let it cool.
- In a bowl, mix sugar, shortening, and salt, then add the cooled milk.
- Incorporate about 1 cup of flour, then add the yeast mixture and beaten eggs.
- Stir in the mashed potatoes and gradually add more flour until the dough is workable.
- Knead the dough until smooth, adding flour as necessary.
- Place the dough in a greased bowl and let it rise for about 45 minutes.
- Punch down the dough and divide it into three balls.
- Dab each ball with butter and place them in a muffin tin.
- Allow the rolls to rise until doubled in size.
- Bake in a preheated oven at 375°F for about 15-20 minutes.
