Ingredients

The dough

  • 1 pkg yeast
  • ½ cup warm water
  • ¾ cup shortening
  • ½ cup sugar
  • 2 large eggs
  • 1 cup mashed potatoes
  • 1 cup scalded milk
  • 5 cups flour
  • 1 tsp salt

For baking

  • butter for dabbing

Instructions

  1. Dissolve yeast in warm water with a little sugar and let it rise for about 5 minutes.
  2. Scald the milk and let it cool.
  3. In a bowl, mix sugar, shortening, and salt, then add the cooled milk.
  4. Incorporate about 1 cup of flour, then add the yeast mixture and beaten eggs.
  5. Stir in the mashed potatoes and gradually add more flour until the dough is workable.
  6. Knead the dough until smooth, adding flour as necessary.
  7. Place the dough in a greased bowl and let it rise for about 45 minutes.
  8. Punch down the dough and divide it into three balls.
  9. Dab each ball with butter and place them in a muffin tin.
  10. Allow the rolls to rise until doubled in size.
  11. Bake in a preheated oven at 375°F for about 15-20 minutes.
