Roasted Garlic Potato Rolls

Ingredients

The dough

  • 2 cups whole wheat flour
  • 1 cup unbleached all-purpose flour
  • ½ cup instant potato flakes
  • ¼ cup instant non-fat dry milk
  • 2 ¼ teaspoons instant yeast
  • 1 ¼ teaspoons kosher salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • ¾ cup warm water
  • ½ cup warm milk

The flavorings

  • 1 head garlic
  • 2 teaspoons extra-virgin olive oil
  • 3 leaves sage
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 400°F and roast the garlic wrapped in foil with olive oil for 30-40 minutes.
  2. Once cooled, mash the roasted garlic and mix with chopped sage.
  3. In a mixing bowl, combine whole wheat flour, all-purpose flour, potato flakes, dry milk, yeast, and salt.
  4. Add butter, honey, and the garlic-sage mixture to the dry ingredients.
  5. Warm water and milk to the appropriate temperature and pour over the mixture, stirring until combined.
  6. Knead the dough until soft, then let it rise in a warm place for 1 to 2 hours.
  7. Deflate the dough, divide it into 16 pieces, and shape into balls.
  8. Place the rolls in a greased pan, cover, and let rise for another 1 ½ to 2 hours.
  9. Preheat the oven to 350°F and bake the rolls for 23 to 25 minutes until golden brown.
  10. Brush the tops with melted butter and serve warm.
