Paleo Carrot Soup

Ingredients

  • 2 tablespoons coconut oil
  • 1 small onion, peeled and chopped
  • 5 large carrots, chopped
  • 1 green apple, chopped
  • ½ ounce fresh ginger, chopped
  • cup orange juice
  • 1 can full fat coconut milk
  • 2 cups chicken stock or water
  • teaspoon cayenne, optional
  • 6 drops stevia, optional
  • to taste fresh lime for garnish

Instructions

  1. Heat coconut oil in a large saucepan.
  2. Sauté onion, carrot, and apple in coconut oil until tender.
  3. Add ginger to the saucepan.
  4. Add orange juice, coconut milk, and stock to the saucepan.
  5. Puree the mixture in small batches using a blender.
  6. Return the mixture to the pan to reheat, stirring in cayenne pepper and stevia if desired.
  7. Garnish with fresh lime and serve.
