Paleo Carrot Soup

Instructions
- Heat coconut oil in a large saucepan.
- Sauté onion, carrot, and apple in coconut oil until tender.
- Add ginger to the saucepan.
- Add orange juice, coconut milk, and stock to the saucepan.
- Puree the mixture in small batches using a blender.
- Return the mixture to the pan to reheat, stirring in cayenne pepper and stevia if desired.
- Garnish with fresh lime and serve.
