Paleo Carrot Soup

Ingredients

The soup

  • 2 tablespoons coconut oil
  • 1 small onion
  • 5 large carrots
  • 1 green apple
  • ½ ounce fresh ginger
  • cup orange juice
  • 1 can full fat coconut milk
  • 2 cups chicken stock or water
  • teaspoon cayenne pepper (optional)
  • 6 drops stevia (optional)

Garnish

  • to taste fresh lime

Instructions

  1. Heat coconut oil in a large saucepan.
  2. Sauté onion, carrot, and apple in the coconut oil until tender.
  3. Add ginger to the saucepan.
  4. Pour in orange juice, coconut milk, and stock.
  5. Carefully puree the mixture in small batches using a blender.
  6. Return the pureed mixture to the pan to reheat, stirring in cayenne pepper and stevia if desired.
  7. Garnish with fresh lime and serve.
