Ingredients

  • 1 and ¾ cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 large eggs
  • ½ cup lightly packed brown sugar
  • 1 cup pumpkin puree
  • 5 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract
  • cup milk
  • ½ cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare mini muffin pans.
  2. In a large bowl, whisk together the dry ingredients.
  3. In another bowl, combine the wet ingredients until smooth.
  4. Mix the wet ingredients into the dry ingredients and fold in the chocolate chips.
  5. Fill the muffin cups and bake for 12-14 minutes until a toothpick comes out clean.
  6. Let the muffins cool slightly before serving.
