Sugar Cookie Cheesecake Bars

Ingredients

The crust

  • 1 package sugar cookie mix (17.5 ounces)
  • 1 box French vanilla instant pudding mix (3.4 ounces)
  • 2 tablespoons light brown sugar
  • ½ cup butter (1 stick, melted)
  • 1 teaspoon vanilla extract
  • 2 whole eggs

The cheesecake filling

  • 2 packages cream cheese (8 ounces each, softened)
  • ½ cup sour cream
  • ½ cup granulated sugar
  • 3 egg yolks plus remaining whole egg
  • teaspoons vanilla extract

For garnish

  • to taste sprinkles

Instructions

  1. Preheat the oven to 350°F and coat a 9x13-inch cake pan with nonstick spray.
  2. In a large bowl, combine the cookie mix, pudding mix, brown sugar, melted butter, 1 teaspoon of vanilla, and 1 whole egg. Mix well and press into the bottom of the pan.
  3. In a standing mixer or large bowl, beat the cream cheese, sour cream, and sugar until smooth.
  4. Add the remaining whole egg, egg yolks, and 1½ teaspoons of vanilla, and beat until smooth.
  5. Pour the cheesecake mixture over the crust in the pan and smooth the top.
  6. Bake for 35 to 45 minutes or until the center is set. Cool for at least 30 minutes.
  7. Top with sprinkles and store in the refrigerator.
