Sugar Cookie Cheesecake Bars

The crust

The cheesecake filling

cream cheese (8 ounces each, softened)

sour cream

granulated sugar

plus remaining whole egg

Instructions
- Preheat the oven to 350°F and coat a 9x13-inch cake pan with nonstick spray.
- In a large bowl, combine the cookie mix, pudding mix, brown sugar, melted butter, 1 teaspoon of vanilla, and 1 whole egg. Mix well and press into the bottom of the pan.
- In a standing mixer or large bowl, beat the cream cheese, sour cream, and sugar until smooth.
- Add the remaining whole egg, egg yolks, and 1½ teaspoons of vanilla, and beat until smooth.
- Pour the cheesecake mixture over the crust in the pan and smooth the top.
- Bake for 35 to 45 minutes or until the center is set. Cool for at least 30 minutes.
- Top with sprinkles and store in the refrigerator.
