Instructions
- Preheat the oven to 325°F (162°C) and prepare an 8-inch square baking pan with parchment paper and nonstick spray.
- Mix melted butter with graham cracker crumbs and press into the bottom of the pan. Bake for 6 minutes and cool.
- In a mixer, beat the butter, sugars, salt, and vanilla for the cookie dough until smooth. Mix in flour and chocolate chips.
- In another bowl, cream together cream cheese and sugar, then mix in egg and vanilla.
- Pour the cheesecake batter over the crust, then distribute clumps of cookie dough on top.
- Bake for about 30 minutes until the top is dry and firm. Cool completely before slicing and serve cold or at room temperature.
