Ingredients

The crust

  • cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted

The chocolate chip cookie dough

  • 5 tablespoons unsalted butter, room temperature
  • cup light brown sugar, packed
  • 3 tablespoons granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ¾ cup flour
  • 1 cup chocolate chips

The cheesecake filling

  • 10 oz. cream cheese, room temperature
  • ¼ cup sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 325°F (162°C) and prepare an 8-inch square baking pan with parchment paper and nonstick spray.
  2. Mix melted butter with graham cracker crumbs and press into the bottom of the pan. Bake for 6 minutes and cool.
  3. In a mixer, beat the butter, sugars, salt, and vanilla for the cookie dough until smooth. Mix in flour and chocolate chips.
  4. In another bowl, cream together cream cheese and sugar, then mix in egg and vanilla.
  5. Pour the cheesecake batter over the crust, then distribute clumps of cookie dough on top.
  6. Bake for about 30 minutes until the top is dry and firm. Cool completely before slicing and serve cold or at room temperature.
