Ingredients

Chocolate Chip Cookie Dough

  • 1 cup salted butter, melted and cooled slightly
  • 1 ⅓ cups lightly packed brown sugar
  • cup granulated sugar
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • 2 cups chocolate chips

Caramel

  • 11 to 14 ounces soft caramels, unwrapped
  • 1 tablespoon cream

Cheesecake

  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 large egg
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13-inch pan with foil or parchment and nonstick spray.
  2. In a large bowl, combine melted butter, brown sugar, granulated sugar, baking soda, and salt. Mix well.
  3. Add eggs and vanilla to the mixture and stir until combined.
  4. Incorporate flour and chocolate chips until no dry streaks remain. Press half of the dough into the bottom of the prepared pan.
  5. Melt caramels with cream in the microwave, stirring until smooth, then spread over the cookie dough.
  6. In another bowl, beat cream cheese and powdered sugar until fluffy, then add egg and vanilla, mixing until combined. Spread this cheesecake layer over the caramel.
  7. Flatten the remaining cookie dough and place it over the cheesecake layer, leaving some spaces uncovered.
  8. Bake for 35-40 minutes until edges are lightly browned and the center is set. Cool completely, then refrigerate for 2-3 hours before cutting into squares.
