Instructions
- Preheat the oven to 350°F and prepare a 9x13-inch pan with foil or parchment and nonstick spray.
- In a large bowl, combine melted butter, brown sugar, granulated sugar, baking soda, and salt. Mix well.
- Add eggs and vanilla to the mixture and stir until combined.
- Incorporate flour and chocolate chips until no dry streaks remain. Press half of the dough into the bottom of the prepared pan.
- Melt caramels with cream in the microwave, stirring until smooth, then spread over the cookie dough.
- In another bowl, beat cream cheese and powdered sugar until fluffy, then add egg and vanilla, mixing until combined. Spread this cheesecake layer over the caramel.
- Flatten the remaining cookie dough and place it over the cheesecake layer, leaving some spaces uncovered.
- Bake for 35-40 minutes until edges are lightly browned and the center is set. Cool completely, then refrigerate for 2-3 hours before cutting into squares.
