Ingredients

The base

  • ¾ cup salted butter
  • 1 cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon table salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ½ cups chocolate chips

The caramel layer

  • 14 ounces soft caramels, unwrapped
  • 2-3 tablespoons milk or cream
  • ⅛ to ¼ teaspoon coarse sea salt, optional

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13-inch pan with foil or parchment paper and nonstick spray.
  2. Brown the butter in a skillet over medium-low heat until it turns toasty brown, then refrigerate for about 10 minutes.
  3. Mix the brown butter with brown sugar, granulated sugar, baking soda, and salt until combined.
  4. Add eggs and vanilla, mixing until well incorporated, then stir in flour and chocolate chips.
  5. Press about 2/3 of the dough into the prepared pan.
  6. Melt the caramels with milk or cream in the microwave until smooth, then spread over the cookie dough.
  7. Sprinkle with coarse sea salt if desired, then dot with remaining cookie dough.
  8. Bake for 20-27 minutes until golden, then let cool completely before cutting into squares.
