Instructions
- Preheat the oven to 350°F and prepare a 9x13-inch pan with foil or parchment paper and nonstick spray.
- Brown the butter in a skillet over medium-low heat until it turns toasty brown, then refrigerate for about 10 minutes.
- Mix the brown butter with brown sugar, granulated sugar, baking soda, and salt until combined.
- Add eggs and vanilla, mixing until well incorporated, then stir in flour and chocolate chips.
- Press about 2/3 of the dough into the prepared pan.
- Melt the caramels with milk or cream in the microwave until smooth, then spread over the cookie dough.
- Sprinkle with coarse sea salt if desired, then dot with remaining cookie dough.
- Bake for 20-27 minutes until golden, then let cool completely before cutting into squares.
