Instructions
- Mix dry ingredients in a bowl.
- In another bowl, beat butter, egg, brown sugar substitute, and vanilla until smooth.
- Combine wet and dry ingredients, then fold in chocolate chips and refrigerate for 30 minutes.
- Preheat the oven to 180C/350F and line an 8x8-inch pan with parchment paper.
- Spread 3/4 of the cookie dough in the pan and bake for 20 minutes.
- Prepare the cheesecake filling by beating cream cheese, sweetener, and egg until smooth.
- Pour the cheesecake filling over the baked cookie layer.
- Drop pieces of the remaining cookie dough on top of the cheesecake filling.
- Bake for an additional 30 minutes, then cool completely before refrigerating.
- Once chilled, slice into bars.
