Ingredients

The bars

  • 2 1/4 cups almond flour
  • 2 tablespoons coconut flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter
  • 1 large egg
  • cup brown sugar substitute
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

The cheesecake filling

  • 8 oz cream cheese
  • 1 large egg
  • ¼ cup granulated sweetener

Instructions

  1. Mix dry ingredients in a bowl.
  2. In another bowl, beat butter, egg, brown sugar substitute, and vanilla until smooth.
  3. Combine wet and dry ingredients, then fold in chocolate chips and refrigerate for 30 minutes.
  4. Preheat the oven to 180C/350F and line an 8x8-inch pan with parchment paper.
  5. Spread 3/4 of the cookie dough in the pan and bake for 20 minutes.
  6. Prepare the cheesecake filling by beating cream cheese, sweetener, and egg until smooth.
  7. Pour the cheesecake filling over the baked cookie layer.
  8. Drop pieces of the remaining cookie dough on top of the cheesecake filling.
  9. Bake for an additional 30 minutes, then cool completely before refrigerating.
  10. Once chilled, slice into bars.
