Chocolate Chip Cheesecake Bars

The crust

toffee sandies shortbread cookies or your favorite shortbread cookie

semi-sweet chocolate chips or your choice of chips

Instructions
- Crush the sandies in a food processor until fine crumbs.
- Mix the melted butter with the cookie crumbs and press into the bottom of a lined 9 x 9-inch pan.
- Bake the crust at 325°F for 10-12 minutes and let cool.
- In a stand mixer, beat together cream cheese, mascarpone, sugar, orange zest, and vanilla until smooth.
- Add eggs one at a time, mixing on low speed until just combined.
- Fold in the chocolate chips.
- Pour the cheesecake mixture over the cooled crust and smooth the top.
- Bake at 325°F for 35-40 minutes until set and lightly browned on top.
- Cool for 10 minutes, then run a knife around the edges to loosen.
- Let cool for 1 hour and refrigerate for at least 6 hours or overnight before serving.
