Sugar Cookie Bars

Ingredients

The cookie base

  • 2 1/4 cups all-purpose flour
  • 1 Tbsp cornstarch
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup unsalted butter
  • 1 1/2 tsp vanilla extract
  • ½ tsp almond extract

The frosting

  • 2 1/4 cups powdered sugar
  • ½ cup unsalted butter
  • 2 - 3 Tbsp heavy cream
  • 1 tsp vanilla extract
  • few drops food coloring
  • sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F and butter a 13 by 9-inch baking sheet.
  2. In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt.
  3. In an electric mixer, cream together the butter and granulated sugar until blended.
  4. Add the eggs one at a time, mixing well after each addition, then blend in the vanilla and almond extracts.
  5. Gradually mix in the flour mixture until just combined.
  6. Spread the dough into the prepared baking dish evenly.
  7. Bake for 14-16 minutes until puffy and just baked through.
  8. Allow to cool completely on a wire rack for about 90 minutes.
  9. For the frosting, blend together powdered sugar, butter, cream, and vanilla until pale and fluffy.
  10. Spread the frosting over the cooled cookie bars and add sprinkles if desired.
