Instructions
- Preheat the oven to 375°F and prepare a 9x13 pan with cooking spray.
- Whisk together the flour, baking powder, and salt in a medium bowl.
- Combine granulated sugar and lemon zest in a small bowl, rubbing them together until fragrant.
- In a stand mixer, beat the butter with the lemon sugar mixture until combined, then add powdered sugar and beat until fluffy.
- Add the eggs, lemon juice, and vanilla to the mixture and beat until smooth.
- Gradually add the flour mixture and mix until just combined.
- Spread the cookie dough evenly in the prepared pan and bake for 12-14 minutes until set but not browned.
- Let the bars cool completely before making the frosting.
- For the frosting, beat the butter and cream cheese until smooth, then add lemon zest and juice.
- Gradually mix in the powdered sugar until smooth.
- Frost the cooled bars and decorate with colored sugar or sprinkles if desired, then cut into squares.
