Ingredients

The cookie bars

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • Zest of 1 large lemon
  • ¾ cup butter at room temperature
  • ¼ cup powdered sugar
  • 2 large eggs
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon vanilla extract

The lemon cream cheese frosting

  • ½ cup unsalted butter at room temperature
  • 8 ounces cream cheese at room temperature
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 5 cups powdered sugar
  • Colored sugar or sprinkles optional

Instructions

  1. Preheat the oven to 375°F and prepare a 9x13 pan with cooking spray.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Combine granulated sugar and lemon zest in a small bowl, rubbing them together until fragrant.
  4. In a stand mixer, beat the butter with the lemon sugar mixture until combined, then add powdered sugar and beat until fluffy.
  5. Add the eggs, lemon juice, and vanilla to the mixture and beat until smooth.
  6. Gradually add the flour mixture and mix until just combined.
  7. Spread the cookie dough evenly in the prepared pan and bake for 12-14 minutes until set but not browned.
  8. Let the bars cool completely before making the frosting.
  9. For the frosting, beat the butter and cream cheese until smooth, then add lemon zest and juice.
  10. Gradually mix in the powdered sugar until smooth.
  11. Frost the cooled bars and decorate with colored sugar or sprinkles if desired, then cut into squares.
