Ingredients

The cookie bars

  • ½ cup unsalted butter, softened to room temperature
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • cups all-purpose flour (spooned & leveled)
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoons cornstarch
  • ½ cup rainbow sprinkles (not nonpareils)

The vanilla frosting

  • ¾ cup unsalted butter, softened to room temperature
  • cups confectioners’ sugar
  • 3 tablespoons heavy cream or half-and-half
  • 1 teaspoon pure vanilla extract
  • to taste salt
  • optional food coloring
  • optional extra sprinkles for decorating

Instructions

  1. Preheat the oven to 350°F (177°C) and line an 8-inch or 9-inch square pan with aluminum foil.
  2. In a large bowl, cream the softened butter until smooth, then add the sugar and beat until fluffy.
  3. Incorporate the egg, egg yolk, and vanilla extract, scraping down the sides as necessary.
  4. In a separate bowl, whisk together the flour, salt, baking powder, baking soda, and cornstarch.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined, then fold in the sprinkles.
  6. Press the cookie dough evenly into the prepared pan and bake for 25-26 minutes until lightly browned.
  7. Allow the bars to cool completely on a wire rack before frosting.
  8. For the frosting, beat the butter until creamy, then add confectioners’ sugar, cream, and vanilla, mixing until fluffy.
  9. Frost the cooled bars generously and decorate with additional sprinkles if desired.
  10. Cut into squares and store in an airtight container.
