Instructions
- Preheat the oven to 350°F (177°C) and line an 8-inch or 9-inch square pan with aluminum foil.
- In a large bowl, cream the softened butter until smooth, then add the sugar and beat until fluffy.
- Incorporate the egg, egg yolk, and vanilla extract, scraping down the sides as necessary.
- In a separate bowl, whisk together the flour, salt, baking powder, baking soda, and cornstarch.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined, then fold in the sprinkles.
- Press the cookie dough evenly into the prepared pan and bake for 25-26 minutes until lightly browned.
- Allow the bars to cool completely on a wire rack before frosting.
- For the frosting, beat the butter until creamy, then add confectioners’ sugar, cream, and vanilla, mixing until fluffy.
- Frost the cooled bars generously and decorate with additional sprinkles if desired.
- Cut into squares and store in an airtight container.
