Stuffed Sweet Potatoes

Ingredients

The filling

  • 2 cups chopped kale, packed
  • ¼ cup unsweetened dried cranberries
  • 2 Tbsp apple cider vinegar
  • ½ Tbsp honey
  • 1 lemon zested and juiced
  • ½ Tbsp olive oil
  • 1 pinch salt
  • ¼ cup pepitas

The sweet potatoes

  • 4 large sweet potatoes

Instructions

  1. In a microwave-safe bowl, combine cranberries, apple cider vinegar, honey, and lemon juice, then microwave for 1 minute and let steep.
  2. Rinse sweet potatoes, pierce with a fork, and microwave for 10 to 15 minutes until tender.
  3. Smash the rehydrated cranberries with a fork to thicken the sauce.
  4. In a large bowl, combine kale, olive oil, and salt, then massage until tender.
  5. Mix pepitas and undrained cranberries into the kale.
  6. Once potatoes are done, slice them in half and fluff the insides.
  7. Stuff each potato with the kale mixture and sprinkle with lemon zest.
