Stuffed Sweet Potatoes

The sweet potatoes
Instructions
- In a microwave-safe bowl, combine cranberries, apple cider vinegar, honey, and lemon juice, then microwave for 1 minute and let steep.
- Rinse sweet potatoes, pierce with a fork, and microwave for 10 to 15 minutes until tender.
- Smash the rehydrated cranberries with a fork to thicken the sauce.
- In a large bowl, combine kale, olive oil, and salt, then massage until tender.
- Mix pepitas and undrained cranberries into the kale.
- Once potatoes are done, slice them in half and fluff the insides.
- Stuff each potato with the kale mixture and sprinkle with lemon zest.
