Ingredients

The steak

  • lb uncooked lean and trimmed flank steak
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley

The filling

  • 3 teaspoons olive oil
  • 3 cloves garlic, minced
  • 3 oz Parmesan cheese, freshly shredded
  • 2 oz shredded 2% Mozzarella cheese
  • 1 tablespoon lemon zest
  • 2 cups torn fresh spinach leaves

Other

  • 1 piece butchers twine (or toothpicks)

Instructions

  1. Preheat the oven to 350°F.
  2. Butterfly the flank steak and pound it to an even ½ inch thickness, then season with salt, pepper, and parsley.
  3. Heat a teaspoon of olive oil in a skillet, add garlic, and cook until fragrant.
  4. Spread the garlic over the steak, then sprinkle with Parmesan and Mozzarella, lemon zest, and spinach.
  5. Roll the steak tightly over the filling and tie with twine in six segments.
  6. Slice the roll into six pinwheels.
  7. Sear the pinwheels in a skillet with olive oil for 2-3 minutes on each side.
  8. Transfer to a baking dish and bake for 10 minutes.
  9. Let rest covered with foil for 5 minutes before serving.
