Sheet Pan Parmesan Steak and Potatoes

Ingredients

  • pounds flank steak
  • pounds baby potatoes
  • 1 pound fresh asparagus
  • 3 cloves garlic
  • ½ cup shredded Parmesan cheese
  • 1 tablespoon olive oil
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • to taste fresh parsley

Instructions

  1. Preheat the oven to 375℉ and position the baking rack in the middle.
  2. Toss the potatoes with olive oil, minced garlic, and salt on a baking sheet.
  3. Bake the potatoes for 15-20 minutes until tender and lightly browned.
  4. While the potatoes bake, mix the remaining garlic, Parmesan cheese, olive oil, salt, and pepper, then rub this mixture on both sides of the steak.
  5. Remove the pan from the oven, switch to broil, and move the potatoes to one side. Add asparagus to the other side and drizzle with oil, salt, and pepper.
  6. Place the steak on the sheet pan and broil for 8-10 minutes, flipping halfway through.
  7. Once cooked to your liking, remove from the oven, sprinkle with more Parmesan cheese and parsley, and serve.
