Ingredients

The steak

  • 5 8-oz Top sirloin steaks
  • 2 ¼ tsp Sea salt
  • ½ tsp Black pepper
  • 1 tbsp Worcestershire sauce
  • 3 tbsp Olive oil
  • 2 tbsp Dry red wine
  • ½ cup Unsalted butter
  • 7 cloves Garlic
  • 10 sprigs Fresh thyme

The potatoes and onions

  • 3 medium Yellow onions
  • 2 lbs Yukon gold mini potatoes

Instructions

  1. Season the steaks with salt and pepper, then let them come to room temperature.
  2. In a skillet, heat olive oil and cook onions, red wine, and Worcestershire sauce for 5 minutes, then caramelize the onions.
  3. Preheat the oven to 375°F (190°C). Puree the caramelized onions with butter and garlic in a food processor.
  4. Sear the steaks in a cast iron skillet for 2 minutes per side until browned.
  5. Add the potatoes to the skillet, top with the onion butter, and place thyme sprigs over everything.
  6. Bake in the oven until the steak reaches desired doneness, then let the steaks rest.
  7. Return the potatoes to the oven until fork tender and serve with the remaining caramelized onions.
