Instructions
- Season the steaks with salt and pepper, then let them come to room temperature.
- In a skillet, heat olive oil and cook onions, red wine, and Worcestershire sauce for 5 minutes, then caramelize the onions.
- Preheat the oven to 375°F (190°C). Puree the caramelized onions with butter and garlic in a food processor.
- Sear the steaks in a cast iron skillet for 2 minutes per side until browned.
- Add the potatoes to the skillet, top with the onion butter, and place thyme sprigs over everything.
- Bake in the oven until the steak reaches desired doneness, then let the steaks rest.
- Return the potatoes to the oven until fork tender and serve with the remaining caramelized onions.
