Whole30 Garlic Butter Steak and Potatoes Skillet

Ingredients

  • 1 lb. new potatoes, halved
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon fresh thyme
  • 5 cloves garlic, minced
  • 2 tablespoons ghee
  • 1.5 lbs. top sirloin, cut into 1” cubes
  • to taste salt & pepper
  • to garnish chopped parsley

Instructions

  1. Toss the halved new potatoes with rosemary, thyme, 3 cloves of minced garlic, salt, and pepper; set aside.
  2. Season the steak cubes with salt and pepper.
  3. Heat a large skillet to medium-high heat, add 1 tablespoon of ghee and 2 cloves of minced garlic, then sear the steak cubes for 3 minutes on each side; remove and set aside.
  4. Reduce heat to medium, add the remaining ghee and the seasoned potatoes to the skillet, sauté until browned and cooked through, about 10 to 15 minutes.
  5. Once the potatoes are cooked, return the steak to the skillet, stir everything together, and cook for an additional 1 to 2 minutes before serving, garnished with chopped parsley.
