Butter-Basted Garlic Herb Skillet Steak

beef steak (ribeye, t-bone, or NY strip)
The seasoning and cooking fat

extra virgin olive oil

real butter
The aromatics

fresh rosemary

garlic (peeled and smashed)
Instructions
- Let the steak come to room temperature and pat it dry.
- Sprinkle both sides of the steak with kosher salt and let it sit for 15-30 minutes.
- Heat a cast iron pan on medium to medium-high heat and add olive oil.
- Blot the steak again and season it with black pepper and a little more kosher salt.
- Place the steak in the pan and sear for about 2 minutes before flipping.
- After flipping, add butter, rosemary, and garlic to the pan.
- Reduce the heat and baste the steak with the melted butter until it reaches the desired internal temperature.
- Remove the steak from the pan and let it rest for 5 minutes before serving.
