Butter-Basted Garlic Herb Skillet Steak

Ingredients

The steak

  • 1 large beef steak (ribeye, t-bone, or NY strip)

The seasoning and cooking fat

  • to taste kosher salt
  • to taste black pepper
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons real butter

The aromatics

  • 2-3 sprigs fresh rosemary
  • 3-4 cloves garlic (peeled and smashed)

Instructions

  1. Let the steak come to room temperature and pat it dry.
  2. Sprinkle both sides of the steak with kosher salt and let it sit for 15-30 minutes.
  3. Heat a cast iron pan on medium to medium-high heat and add olive oil.
  4. Blot the steak again and season it with black pepper and a little more kosher salt.
  5. Place the steak in the pan and sear for about 2 minutes before flipping.
  6. After flipping, add butter, rosemary, and garlic to the pan.
  7. Reduce the heat and baste the steak with the melted butter until it reaches the desired internal temperature.
  8. Remove the steak from the pan and let it rest for 5 minutes before serving.
