Instructions
- Ensure the steak is at room temperature.
- Pat the steak dry with a paper towel.
- Generously season the steak with sea salt and black pepper.
- If using, insert a meat thermometer.
- Heat avocado oil in a cast iron skillet over high heat.
- Wait until the oil shimmers before adding the steak.
- Cook the steak for 3-4 minutes without touching it.
- Flip the steak and cook for an additional 3 minutes for medium rare.
- Add smashed garlic, butter, and thyme to the pan and baste the steak.
- Remove the steak from heat and let it rest for 5 minutes before slicing.
