Ingredients

The steak

  • 1 steak Rib Eye or New York Strip

The seasoning and flavoring

  • 2-4 cloves fresh garlic
  • 4 tablespoons unsalted butter
  • 1 pinch sea salt
  • 1 pinch black pepper

Instructions

  1. Ensure the steak is at room temperature.
  2. Pat the steak dry with a paper towel.
  3. Generously season the steak with sea salt and black pepper.
  4. If using, insert a meat thermometer.
  5. Heat avocado oil in a cast iron skillet over high heat.
  6. Wait until the oil shimmers before adding the steak.
  7. Cook the steak for 3-4 minutes without touching it.
  8. Flip the steak and cook for an additional 3 minutes for medium rare.
  9. Add smashed garlic, butter, and thyme to the pan and baste the steak.
  10. Remove the steak from heat and let it rest for 5 minutes before slicing.
