Meal Prep Sheet Pan Steak and Veggies

The steak and marinade

McCormick’s Grill Mates BBQ Seasoning

unsweetened cocoa powder

The vegetables

cups
broccoli, chopped

red pepper
sliced

½
yellow pepper
sliced

½
orange pepper
sliced

red onion
sliced

fingerling potatoes, purple and yellow
Instructions
- Wash and trim any fat from the steak and pat it dry.
- Drizzle soy sauce and liquid smoke onto both sides of the steak.
- Combine the seasonings in a bowl and sprinkle them on both sides of the steak.
- Place the steak in a Ziploc bag, seal it, and refrigerate to marinate for at least 30 minutes (overnight is recommended).
- Fill a large pot with boiling salted water and add the potatoes, cooking for 10 minutes until soft.
- Preheat the oven to BROIL and spray a sheet pan with cooking spray.
- Spread the steak and veggies (including the cooked potatoes) onto the sheet pan and season the veggies with salt and pepper.
- Broil in the oven for 5-6 minutes until the steak is cooked through.
- Remove from the oven and let cool for about 5 minutes.
- Melt butter in a small bowl in the microwave and brush it onto the steak.
- Slice the steak into smaller pieces and serve.
