Meal Prep Sheet Pan Steak and Veggies

Ingredients

The steak and marinade

  • 20 oz sirloin steak
  • 1-2 tablespoons low-sodium soy sauce
  • 1 teaspoon liquid smoke
  • 1 teaspoon McCormick’s Grill Mates Montreal Steak Seasoning
  • 1 teaspoon McCormick’s Grill Mates BBQ Seasoning
  • 1-2 teaspoons unsweetened cocoa powder
  • ¼ teaspoon Kosher Salt
  • 1 teaspoon pepper

The vegetables

  • 3 cups broccoli, chopped
  • ½ red pepper sliced
  • ½ yellow pepper sliced
  • ½ orange pepper sliced
  • ¼ red onion sliced
  • 3 cups fingerling potatoes, purple and yellow

Instructions

  1. Wash and trim any fat from the steak and pat it dry.
  2. Drizzle soy sauce and liquid smoke onto both sides of the steak.
  3. Combine the seasonings in a bowl and sprinkle them on both sides of the steak.
  4. Place the steak in a Ziploc bag, seal it, and refrigerate to marinate for at least 30 minutes (overnight is recommended).
  5. Fill a large pot with boiling salted water and add the potatoes, cooking for 10 minutes until soft.
  6. Preheat the oven to BROIL and spray a sheet pan with cooking spray.
  7. Spread the steak and veggies (including the cooked potatoes) onto the sheet pan and season the veggies with salt and pepper.
  8. Broil in the oven for 5-6 minutes until the steak is cooked through.
  9. Remove from the oven and let cool for about 5 minutes.
  10. Melt butter in a small bowl in the microwave and brush it onto the steak.
  11. Slice the steak into smaller pieces and serve.
