Ingredients

Marinated Steak

  • 2 lbs beef tenderloin (ribeye or top sirloin) cut into 2" cubes
  • ¼ cup olive oil
  • 2 tablespoons tamari sauce
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dry oregano
  • 1 teaspoon dry rosemary
  • ½ teaspoon black pepper

Kabobs Ingredients

  • 2 green peppers, cut into 1" cubes
  • 2 red peppers, cut into 1" cubes
  • 1 red onion, cut into 1" cubes
  • 1 lb baby yukon potatoes, sliced in half
  • 1 pint baby bella mushrooms

Instructions

  1. Mix olive oil, tamari sauce, worcestershire sauce, dijon mustard, lemon juice, oregano, rosemary, and pepper in a bowl.
  2. Marinate the meat with half of the marinade for 30 minutes to 1 hour.
  3. Microwave yukon potatoes with water for 7 minutes until slightly cooked.
  4. Assemble kabobs by alternating peppers, onion, meat, potatoes, and mushrooms on skewers.
  5. Preheat the grill to medium high heat (375-400°F) and clean the grates.
  6. Grill the kabobs for 3-4 minutes on each side, basting with the reserved marinade.
  7. Let the kabobs rest for 5 minutes before serving.
