Grilled Steak Kabobs

Ingredients

Beef and Vegetables

  • 2 pounds beef, cut into 1-1½ inches cubes
  • 1 large white or red onion, cut into chunks
  • 2 units bell peppers (red and green), cut into chunks

Marinade

  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • ½ teaspoon thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon pepper flakes
  • 2 tablespoons soy sauce
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Cut the beef into 1-1½ inch cubes and the vegetables into similar sizes.
  2. In a medium bowl, mix garlic, cumin, thyme, oregano, nutmeg, allspice, black pepper, pepper flakes, soy sauce, and olive oil. Reserve some for basting.
  3. Marinate the beef with half of the marinade and the vegetables with the other half for at least 30 minutes.
  4. Preheat the grill to medium-high heat and oil the grill pan if using.
  5. Thread the marinated beef and vegetables onto skewers, alternating them.
  6. Grill the kabobs for 4-5 minutes per side, basting frequently with the reserved marinade until the desired temperature is reached.
  7. Let the kabobs rest for about 5 minutes before serving.
