Grilled Balsamic Beef Kabobs

Ingredients

Balsamic Beef

  • 2 lbs top sirloin, cut into 1” cubes
  • ½ cup Balsamic Vinegar
  • cup olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon dry rosemary or 2 tablespoons fresh rosemary
  • 1 clove garlic, minced
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Kabobs Ingredients

  • 2 each yellow peppers, cubed
  • 2 each green peppers, cubed
  • 1 each red onion, cubed
  • 1 pint cherry tomatoes
  • 1 cup whole baby bella mushrooms

Instructions

  1. Mix balsamic vinegar, olive oil, mustard, rosemary, garlic, honey, salt, and pepper in a bowl. Reserve ⅓ cup of the marinade.
  2. Add the beef to the bowl and coat with the marinade. Cover and refrigerate for 30 minutes to 1 hour.
  3. Assemble the kabobs by alternating yellow pepper, green pepper, red onion, meat, cherry tomatoes, and mushrooms on skewers.
  4. Preheat the grill to medium-high heat (375-400°F) and clean the grill grates.
  5. Place the kabobs on the grill and cook for 3-4 minutes on each side until charred. Let rest for 5 minutes before serving with the reserved marinade.
