Ingredients

Beef Kabobs

  • 1.5 lbs. top sirloin, cut into 1” cubes
  • 1 unit red onion, quartered
  • 2 unit zucchini, cut into 1” slices
  • 1 pint cherry tomatoes
  • to taste unit olive oil
  • to taste unit salt
  • to taste unit pepper

Avocado Cucumber Tzatziki

  • 5.5 oz. Fage plain greek yogurt
  • ½ unit avocado
  • 1 teaspoon dry dill
  • ½ cup cucumber, grated
  • 1 unit lemon, juiced
  • 1 clove garlic
  • to taste unit salt
  • to taste unit pepper

Instructions

  1. Blend garlic for 30 seconds.
  2. Add yogurt, avocado, dill, cucumber, lemon juice, salt, and pepper to the blender and blend until creamy.
  3. Set the tzatziki sauce aside.
  4. Prepare the kabobs by alternating beef and vegetables on skewers, then season with olive oil, salt, and pepper.
  5. Preheat the grill to medium-high heat.
  6. Grill the kabobs for 4-5 minutes on each side.
  7. Remove from the grill and let rest for 2-3 minutes.
  8. Serve the kabobs with the tzatziki sauce.
