Instructions
- Blend garlic for 30 seconds.
- Add yogurt, avocado, dill, cucumber, lemon juice, salt, and pepper to the blender and blend until creamy.
- Set the tzatziki sauce aside.
- Prepare the kabobs by alternating beef and vegetables on skewers, then season with olive oil, salt, and pepper.
- Preheat the grill to medium-high heat.
- Grill the kabobs for 4-5 minutes on each side.
- Remove from the grill and let rest for 2-3 minutes.
- Serve the kabobs with the tzatziki sauce.
