Braised Sirloin Steaks

Ingredients

The steaks and cooking base

  • 6 - 8 oz top sirloin steaks, trimmed of excess visible fat
  • 1 tablespoon ghee
  • 2 large onions, sliced
  • 2 leaves bay leaves
  • 3 cups water, divided

The spice mix

  • 2 tablespoons dried onion flakes
  • 2 tablespoons dried oregano
  • 1 tablespoon sweet paprika
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon coriander seeds
  • 1 tablespoon black peppercorns
  • teaspoons Himalayan salt
  • 1 teaspoon chili pepper flakes
  • 1 teaspoon dried chives
  • ½ teaspoon cayenne pepper

Instructions

  1. Preheat the outdoor grill to 600°F (315°C) and the oven to 350°F (175°C).
  2. Grind all spices together until somewhat coarse.
  3. Sprinkle the spice mixture generously on both sides of the steaks and massage it in.
  4. Grill the steaks for about 10 minutes on each side until nicely charred.
  5. While grilling, melt ghee in a Dutch oven over medium-low heat and cook the onions until soft.
  6. Add 2 cups of water and bay leaves to the onions, then remove from heat.
  7. Once grilled, place the steaks in the Dutch oven on top of the onions, cover, and transfer to the oven.
  8. Braise for 2 hours or until fork tender, checking liquid levels after an hour and adding water if needed.
  9. Serve hot, covered with the onion compote from the pot.
