Braised Sirloin Steaks

The spice mix

dried onion flakes

black peppercorns

Himalayan salt

Instructions
- Preheat the outdoor grill to 600°F (315°C) and the oven to 350°F (175°C).
- Grind all spices together until somewhat coarse.
- Sprinkle the spice mixture generously on both sides of the steaks and massage it in.
- Grill the steaks for about 10 minutes on each side until nicely charred.
- While grilling, melt ghee in a Dutch oven over medium-low heat and cook the onions until soft.
- Add 2 cups of water and bay leaves to the onions, then remove from heat.
- Once grilled, place the steaks in the Dutch oven on top of the onions, cover, and transfer to the oven.
- Braise for 2 hours or until fork tender, checking liquid levels after an hour and adding water if needed.
- Serve hot, covered with the onion compote from the pot.
