Ingredients

The steak

  • 21 ounces sirloin steak

The seasoning and cooking

  • 1 tablespoon kosher salt
  • ½ tablespoon black pepper
  • 2 tablespoons butter
  • 2 cloves garlic
  • 1 tablespoon thyme
  • 1 tablespoon parsley

Instructions

  1. Pat dry the steak with paper towels and season both sides with salt and pepper.
  2. Heat oil in a cast iron skillet until very hot and sear the steaks for about 4 minutes on each side.
  3. Sear the edges of the steak until they start to char.
  4. Reduce the heat to medium and add butter, garlic, and fresh herbs, spooning the butter over the steaks.
  5. Cook for an additional 1-2 minutes based on desired doneness.
  6. Transfer the steak to a cutting board and let it rest for 10 minutes before slicing and serving.
