Ingredients

Roasted Tomatoes

  • 0.90 kg tomatoes
  • ½ tbsp extra virgin olive oil
  • ½ tbsp balsamic vinegar
  • to taste fine grain sea salt
  • to taste pepper

Basil Cashew Cheeze

  • 2 cloves garlic
  • 1 cup fresh basil
  • ¼ cup roasted tomatoes
  • 1 cup raw cashews
  • 2 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • 2 tbsp water
  • 1 tbsp nutritional yeast
  • ¼ tsp fine grain sea salt

Crust

  • as needed large tortillas

Instructions

  1. Soak cashews in water for at least 1 hour, then rinse and drain.
  2. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  3. Chop the tomatoes and mix with olive oil, balsamic vinegar, salt, and pepper.
  4. Spread tomatoes on the baking sheet and roast for about 30 minutes.
  5. Reduce the oven temperature to 350°F.
  6. In a food processor, mince garlic, then add basil, roasted tomatoes, and drained cashews.
  7. Blend until smooth, adding remaining ingredients to taste.
  8. Place tortillas on a baking sheet, spread the sauce on each, and top with roasted tomatoes.
  9. Bake for 13-15 minutes or until crisp and golden.
  10. Serve immediately and store leftover sauce in the fridge.
