Instructions
- Soak cashews in water for at least 1 hour, then rinse and drain.
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Chop the tomatoes and mix with olive oil, balsamic vinegar, salt, and pepper.
- Spread tomatoes on the baking sheet and roast for about 30 minutes.
- Reduce the oven temperature to 350°F.
- In a food processor, mince garlic, then add basil, roasted tomatoes, and drained cashews.
- Blend until smooth, adding remaining ingredients to taste.
- Place tortillas on a baking sheet, spread the sauce on each, and top with roasted tomatoes.
- Bake for 13-15 minutes or until crisp and golden.
- Serve immediately and store leftover sauce in the fridge.
