Ingredients

The base

  • 2 pieces tortillas

The filling

  • 1.5-2 cups cooked black beans
  • cup 5-ingredient cheeze sauce
  • 3 tbsp minced fresh parsley
  • ½ cup red onion, chopped
  • ½ cup bell pepper, chopped
  • ½ piece avocado, chopped
  • ¼ tsp kosher salt
  • to taste ground cumin

Toppings

  • to taste pizza sauce
  • to taste Daiya cheese or other non-dairy cheese

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment or a non-stick baking mat.
  2. In a bowl, mix the drained and rinsed beans, cheeze sauce, parsley, onion, pepper, and seasonings until well combined.
  3. Place the tortillas on the baking sheet and spread your desired amount of pizza sauce on top.
  4. Divide the bean mixture between the two tortillas and spread it evenly.
  5. Sprinkle cheese on top and bake for 10 minutes at 350°F, then broil on low for 2 minutes until golden, watching closely to prevent burning.
