Ingredients

The dough

  • 1 pound gluten free quinoa pizza dough

The toppings

  • 1 tablespoon extra virgin olive oil
  • 2 medium tomatoes, sliced
  • 1 medium red onion, sliced thin
  • 6 cloves garlic, sliced thin
  • ½ cup crumbled feta cheese or vegan feta
  • ¼ cup kalamata olives, pitted and sliced
  • ¼ teaspoon crushed red pepper
  • cup fresh basil

Instructions

  1. Preheat the oven to 420°F and place a pizza stone on the bottom rack.
  2. Roll out the pizza dough on parchment paper and brush it with olive oil.
  3. Top the dough with sliced tomatoes, red onion, garlic, feta, olives, and crushed red pepper.
  4. Transfer the pizza to the preheated pizza stone using a pizza peel or the back of a sheet pan.
  5. Bake for 20 to 25 minutes until the crust is golden and crispy.
  6. Remove from the oven and top with fresh basil before serving warm.
