Ingredients

The pizza base

  • 16 oz pizza dough
  • 2 ½ Tbsp extra virgin olive oil
  • 3 cloves garlic
  • ½ tsp dried oregano
  • ¼ tsp dried basil
  • tsp dried thyme
  • to taste salt
  • to taste black pepper
  • 6 oz fresh mozzarella
  • 4 oz feta cheese

The toppings

  • ½ cup chopped bell pepper
  • 1 cup diced grape tomatoes
  • cup chopped kalamata olives
  • ¼ cup chopped red onion
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 450°F and place a pizza stone inside for 30 minutes.
  2. Combine 1 ½ Tbsp of olive oil and minced garlic in a small bowl.
  3. Shape the pizza dough into a 12-13 inch round on lightly floured parchment paper, creating a rim along the edge.
  4. Brush the dough with the olive oil and garlic mixture, then sprinkle with oregano, basil, thyme, salt, and pepper.
  5. Top the dough with mozzarella and feta cheese.
  6. Bake in the preheated oven for 12-15 minutes until the crust is golden.
  7. While the pizza is baking, sauté the bell peppers in 1 Tbsp of olive oil until tender.
  8. Remove the pizza from the oven and top with sautéed peppers, tomatoes, olives, onion, and parsley.
  9. Cut into slices and serve.
