Ingredients

The pizza base

  • 1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough

The sauce

  • cup easy pizza sauce or marinara sauce or one 32-ounce can whole tomatoes, drained and crushed by hand
  • ½ teaspoon dried oregano

The toppings

  • 8 ounces grated low-moisture part-skim mozzarella cheese
  • ½ cup thin, 1-inch strips roasted red pepper (from about ½ medium roasted red pepper)
  • ½ cup quartered marinated or jarred artichokes, halved lengthwise
  • 15 pieces pitted Kalamata olives, halved lengthwise
  • ½ cup crumbled feta

Optional garnishes

  • 3-4 leaves fresh basil, torn into little pieces
  • to taste red pepper flakes

Instructions

  1. Preheat the oven to 500°F with a rack in the upper third of the oven.
  2. Prepare the pizza dough through step 5.
  3. Spread the pizza sauce evenly over the pizzas and sprinkle with dried oregano.
  4. Divide the toppings evenly over the two pizzas, starting with mozzarella, followed by roasted red pepper, artichoke, olives, and feta.
  5. Bake the pizzas on the top rack until the crust is golden and the cheese is bubbly, about 12 minutes.
  6. Transfer the pizza to a cutting board, sprinkle with torn basil and red pepper flakes, slice, and serve.
