Mediterranean Roasted Red Pepper Pizza

Ingredients

The dough and base

  • ½ pound pizza dough
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced or grated
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes
  • to taste kosher salt and pepper

The toppings

  • ½ cup pitted kalamata olives
  • cup oil packed sun-dried tomatoes, oil drained and sliced
  • ¼ cup marinated artichokes, drained
  • 8 ounces mozzarella, torn or shredded
  • ½ cup shredded fontina cheese
  • 4-8 slices pepperoni (optional)
  • 2 pieces red bell peppers, very thinly sliced
  • to taste fresh basil, for topping

Instructions

  1. Preheat the oven to 425°F and grease a baking sheet with olive oil.
  2. On a floured surface, roll out the pizza dough until very thin.
  3. Transfer the dough to the prepared baking sheet and spread with olive oil.
  4. Sprinkle garlic, basil, oregano, crushed red pepper flakes, and a pinch of salt and pepper over the dough.
  5. Add olives, sun-dried tomatoes, artichokes, and cheese on top.
  6. If using, add pepperoni and thinly sliced bell peppers.
  7. Bake in the oven for 10-15 minutes until the crust is crisp and the cheese has melted.
  8. Remove from the oven and top with fresh basil before serving.
