Instructions
- Combine warm water, sugar, and yeast in a bowl and let it stand until bubbly.
- Add salt and 1½ cups of flour, mixing well. Gradually add more flour until the dough pulls away from the sides.
- Cover the dough and let it rise until doubled in size, about 45 minutes.
- Prepare the sauce by mixing tomato paste with water and adding the remaining sauce ingredients.
- Divide the dough into 4 balls and roll each into a thin circle.
- Preheat the grill to medium-high heat.
- Brush one side of the dough with olive oil and place it on the grill, oiled side down.
- Grill the dough for about 5 minutes until it has grill marks, then flip it.
- Spread pizza sauce and olive pesto on the grilled side, then top with bell peppers, onions, mozzarella, and feta.
- Grill until the cheese is melted and the pizza is cooked through.
- Remove from the grill and top with fresh spinach before serving.
