Ingredients

Dough

  • cup warm water
  • 1 tablespoon sugar
  • 1 tablespoon yeast
  • ½ teaspoon kosher salt
  • 3-4½ cups all-purpose flour

Sauce

  • 1 6-ounce can tomato paste
  • 6 ounces water
  • ½ cup powdered parmesan cheese
  • 2 teaspoons kosher salt
  • 2 tablespoons garlic powder
  • 2 teaspoons oregano
  • 2 teaspoons basil
  • 2 teaspoons marjoram
  • 2 teaspoons parsley

Pizza Toppings

  • 1 tablespoon extra-virgin olive oil
  • ½ cup basil pesto
  • ½ cup Kalamata olives, pitted
  • 1 bell pepper, red sliced
  • 1 orange or yellow bell pepper sliced
  • ½ medium red onion, sliced
  • 8 ounces mozzarella cheese, shredded
  • 4 ounces Feta cheese, crumbled
  • 2 handfuls fresh baby spinach

Instructions

  1. Combine warm water, sugar, and yeast in a bowl and let it stand until bubbly.
  2. Add salt and 1½ cups of flour, mixing well. Gradually add more flour until the dough pulls away from the sides.
  3. Cover the dough and let it rise until doubled in size, about 45 minutes.
  4. Prepare the sauce by mixing tomato paste with water and adding the remaining sauce ingredients.
  5. Divide the dough into 4 balls and roll each into a thin circle.
  6. Preheat the grill to medium-high heat.
  7. Brush one side of the dough with olive oil and place it on the grill, oiled side down.
  8. Grill the dough for about 5 minutes until it has grill marks, then flip it.
  9. Spread pizza sauce and olive pesto on the grilled side, then top with bell peppers, onions, mozzarella, and feta.
  10. Grill until the cheese is melted and the pizza is cooked through.
  11. Remove from the grill and top with fresh spinach before serving.
