Ingredients

Whipped Cream Layer

  • 1 recipe Keto Whipped Cream

Pudding Layer

  • 2 cups Heavy cream
  • ½ cup Besti Powdered Monk Fruit Allulose Blend
  • ¼ tsp Sea salt
  • 5 large Egg yolks
  • ½ tsp Xanthan gum
  • 2 tsp Banana extract
  • 1 tsp Vanilla extract
  • ¼ cup Unsalted butter (at room temperature)

Shortbread Cookie Layer

  • 1 recipe Coconut Flour Shortbread Cookies

Instructions

  1. Whisk heavy cream with the sweetener and salt in a saucepan over medium heat until simmering.
  2. In a separate bowl, whisk the egg yolks.
  3. Slowly stream the hot cream mixture into the egg yolks while whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan, sprinkle in xanthan gum, and whisk until thickened.
  5. Remove from heat and stir in the vanilla extract, banana extract, and butter.
  6. Cool the pudding for 10 minutes, whisk again, cover with plastic wrap, and refrigerate until firm (at least 2 hours).
  7. Prepare the coconut flour shortbread cookies according to the recipe.
  8. Make the keto whipped cream as per the instructions.
  9. Fold the whipped cream into the cooled pudding mixture gently.
  10. Layer the shortbread cookies in a baking dish, followed by the pudding mixture and remaining whipped cream.
  11. Refrigerate for at least 4 hours or overnight to set.
