Instructions
- Whisk heavy cream with the sweetener and salt in a saucepan over medium heat until simmering.
- In a separate bowl, whisk the egg yolks.
- Slowly stream the hot cream mixture into the egg yolks while whisking constantly to temper the eggs.
- Return the mixture to the saucepan, sprinkle in xanthan gum, and whisk until thickened.
- Remove from heat and stir in the vanilla extract, banana extract, and butter.
- Cool the pudding for 10 minutes, whisk again, cover with plastic wrap, and refrigerate until firm (at least 2 hours).
- Prepare the coconut flour shortbread cookies according to the recipe.
- Make the keto whipped cream as per the instructions.
- Fold the whipped cream into the cooled pudding mixture gently.
- Layer the shortbread cookies in a baking dish, followed by the pudding mixture and remaining whipped cream.
- Refrigerate for at least 4 hours or overnight to set.
