Instructions
- Bloom the gelatin by sprinkling it over ¼ cup of heavy cream and whisking immediately; set aside.
- In a medium saucepan, combine the remaining heavy cream, powdered sweetener, cocoa powder, and sea salt; heat over medium-low while whisking until smooth and bubbling, but do not boil.
- Remove from heat and stir in the vanilla extract.
- Add the bloomed gelatin mixture to the saucepan and whisk until smooth and dissolved.
- Let the pudding cool for about 10 minutes, then cover with plastic wrap flush against the top to prevent a film from forming.
- Refrigerate for at least 2 hours until firm; stir before serving.
