Ingredients

  • 2 cups Heavy cream
  • 1 ½ tsp Unflavored gelatin powder
  • ¼ cup Besti Powdered Monk Fruit Allulose Blend
  • ¼ cup Dutch processed cocoa powder
  • ¼ tsp Sea salt
  • 2 tsp Vanilla extract

Instructions

  1. Bloom the gelatin by sprinkling it over ¼ cup of heavy cream and whisking immediately; set aside.
  2. In a medium saucepan, combine the remaining heavy cream, powdered sweetener, cocoa powder, and sea salt; heat over medium-low while whisking until smooth and bubbling, but do not boil.
  3. Remove from heat and stir in the vanilla extract.
  4. Add the bloomed gelatin mixture to the saucepan and whisk until smooth and dissolved.
  5. Let the pudding cool for about 10 minutes, then cover with plastic wrap flush against the top to prevent a film from forming.
  6. Refrigerate for at least 2 hours until firm; stir before serving.
