Creamy Vegan Pasta

Instructions
- Prepare the pasta according to package instructions until al dente, then drain.
- In a skillet, heat olive oil and sauté the chopped onion until soft.
- Add the chopped broccoli stems and cook until tender, then add the florets and leaves with a splash of water or broth.
- Cover and allow the broccoli to steam until bright green and tender.
- Combine the cooked pasta with the broccoli and stir in most of the sauce, adding more broth if needed.
- Season with salt, pepper, and lemon juice as desired, then serve topped with remaining sauce and pine nuts.
