Creamy Vegan Pasta

The pasta and vegetables

The sauce

cooked white beans, drained and rinsed

vegetable broth

Instructions
- Blend the sauce ingredients until smooth and set aside.
- Boil salted water and cook the pasta until al dente, then drain.
- Sauté onion in olive oil until soft, then add chopped broccoli stems and cook until tender.
- Add broccoli florets and leaves, cover to steam until bright green.
- Combine the pasta with the sautéed vegetables and ¾ of the sauce, adding more broth if needed.
- Serve in bowls, topping with the remaining sauce, pine nuts, and lemon wedges.
