Curry Spiced Cashews

Ingredients

The cashews

  • 2 cups raw cashews

The seasoning

  • Tbsp melted coconut oil or olive oil
  • 1 Tbsp maple syrup
  • 1 Tbsp green curry paste
  • 1 tsp curry powder
  • Tbsp coconut sugar
  • ½ tsp ground cumin
  • ½ tsp ground ginger
  • ½ tsp ground turmeric
  • ½ scant tsp sea salt
  • 1 pinch ground cardamom (optional)
  • 1 pinch ground coriander (optional)
  • 1 tsp lime zest (optional)

Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. Spread cashews on the baking sheet and toast for 5 minutes.
  3. In a medium bowl, whisk together the oil, maple syrup, and green curry paste.
  4. Add the toasted cashews to the bowl and toss to coat with the mixture.
  5. Add the remaining spices and toss thoroughly to combine.
  6. Return the cashews to the baking sheet and bake for an additional 8-12 minutes until golden brown.
  7. Allow to cool slightly, taste, and adjust seasonings as desired.
  8. Optionally, sprinkle with lime zest and toss to coat.
  9. Store leftovers in an airtight container at room temperature for 2-3 weeks.
