Instructions
- Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Spread cashews on the baking sheet and toast for 5 minutes.
- In a medium bowl, whisk together the oil, maple syrup, and green curry paste.
- Add the toasted cashews to the bowl and toss to coat with the mixture.
- Add the remaining spices and toss thoroughly to combine.
- Return the cashews to the baking sheet and bake for an additional 8-12 minutes until golden brown.
- Allow to cool slightly, taste, and adjust seasonings as desired.
- Optionally, sprinkle with lime zest and toss to coat.
- Store leftovers in an airtight container at room temperature for 2-3 weeks.
