Indian Spiced Nuts

Ingredients

The nuts

  • 2 cups raw almonds
  • 1 cup raw cashews
  • ½ cup raw pecans
  • ½ cup walnuts
  • ½ cup raw hazelnuts
  • ½ cup macadamia nuts

The coating

  • 3 cloves garlic, minced
  • ¼ cup melted ghee
  • 2 tbsp unpasteurized honey

The spice mix

  • 1 tsp salt
  • 1 tbsp garam masala
  • ½ tsp ground cinnamon
  • ½ tsp spicy curry powder
  • ½ tsp cayenne pepper
  • ¼ tsp onion powder
  • ¼ tsp ground cardamom
  • ¼ tsp ground nutmeg

Instructions

  1. Preheat the oven to 300°F.
  2. In a large bowl, combine all the nuts and set aside.
  3. In a small bowl, mix the minced garlic, melted ghee, and honey until well combined.
  4. Pour the mixture over the nuts and toss to coat them evenly.
  5. In another bowl, combine all the spices and mix well.
  6. Sprinkle the spice mix over the coated nuts and stir until evenly coated.
  7. Transfer the nuts to a large baking sheet and bake for 20 to 25 minutes, stirring every 5 minutes.
  8. Once golden and fragrant, let the nuts cool completely on the baking sheet.
  9. Store in an airtight container in a cool, dry place.
