Ingredients

The main dish

  • 1 large head cauliflower
  • ¼ cup panko bread crumbs
  • 1 clove garlic (additional)
  • ½ teaspoon sea salt (additional)
  • ¼ teaspoon smoked paprika
  • a pinch cayenne pepper

The cheese sauce

  • 1 recipe vegan cheese sauce

Optional toppings

  • to taste Parmesan or Vegan Parmesan

Instructions

  1. Make the cheese sauce by blending the vegan cheese sauce ingredients with the additional garlic, salt, smoked paprika, and cayenne.
  2. Preheat the oven broiler.
  3. Boil the cauliflower florets in salted water for 5 minutes, then drain and transfer to a bowl.
  4. Stir the cheese sauce into the cauliflower until evenly coated.
  5. Transfer the mixture to a baking dish, top with panko, and broil for 2 minutes until browned.
  6. Serve with optional Parmesan or Vegan Parmesan.
