Ingredients

The base

  • 1 head cauliflower
  • 1 cup golden potatoes, chopped
  • ½ cup sweet potato, chopped

The sauce

  • ½ cup raw cashews
  • ½ cup water
  • 3 tablespoons nutritional yeast
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 ½ teaspoons salt

Topping

  • 2 tablespoons panko breadcrumbs
  • 1 tablespoon chopped parsley

Instructions

  1. Cut the cauliflower into small florets and cook in boiling salted water for about 10 minutes until tender, then drain.
  2. In a separate pot, cook the chopped golden potatoes and sweet potatoes in boiling water for about 15 minutes until tender, then drain.
  3. Soak the cashews in hot water for at least 30 minutes, then rinse and drain.
  4. Blend the cooked potatoes, soaked cashews, water, nutritional yeast, olive oil, Dijon mustard, garlic powder, onion powder, salt, and lemon juice until smooth.
  5. Preheat the oven to 400°F (200°C).
  6. Pour the sauce over the cooked cauliflower and mix to coat evenly.
  7. Transfer the mixture to a baking dish and sprinkle panko breadcrumbs on top.
  8. Bake for about 10 minutes, then garnish with parsley and serve.
