Cauliflower Mac and Cheese

Instructions
- Cut the cauliflower into small florets and cook in boiling salted water for about 10 minutes until tender, then drain.
- In a separate pot, cook the chopped golden potatoes and sweet potatoes in boiling water for about 15 minutes until tender, then drain.
- Soak the cashews in hot water for at least 30 minutes, then rinse and drain.
- Blend the cooked potatoes, soaked cashews, water, nutritional yeast, olive oil, Dijon mustard, garlic powder, onion powder, salt, and lemon juice until smooth.
- Preheat the oven to 400°F (200°C).
- Pour the sauce over the cooked cauliflower and mix to coat evenly.
- Transfer the mixture to a baking dish and sprinkle panko breadcrumbs on top.
- Bake for about 10 minutes, then garnish with parsley and serve.
