Ginger Garlic Swordfish

Ingredients

The swordfish and marinade

  • 12 ounces swordfish fillets
  • 1 tablespoon extra virgin olive oil
  • sea salt to taste

The compound butter

  • 2 tablespoons butter
  • 2 teaspoons chopped fresh parsley
  • 1 clove garlic, minced
  • ½ teaspoon ginger, grated
  • teaspoon crushed red pepper
  • ½ teaspoon lemon peel, grated

Instructions

  1. Preheat the oven to 400°F.
  2. In a small bowl, blend together the butter, parsley, garlic, ginger, red pepper, and lemon peel.
  3. Season the swordfish with sea salt.
  4. Heat an ovenproof skillet over medium-high heat and add olive oil.
  5. Sear the swordfish for 1-2 minutes until it has a nice color.
  6. Turn the swordfish over, drain excess oil, and add a few tablespoons of water.
  7. Transfer the skillet to the preheated oven and roast the swordfish for about 6-8 minutes until cooked through.
  8. Transfer the swordfish to a serving dish.
  9. Add the seasoned butter mixture to the skillet and cook until melted and bubbling.
  10. Pour the butter sauce over the swordfish and serve with your favorite side dishes.
