Ingredients

The marinade

  • ¼ cup olive oil
  • tablespoons honey
  • tablespoons soy sauce
  • 1 teaspoon lemon zest
  • 2 teaspoons fresh parsley, chopped
  • 2 teaspoons fresh thyme leaves
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¾ teaspoon minced garlic

The main dish

  • 4 pieces swordfish steaks (4-6 ounces each)
  • as needed pieces lemon wedges (for serving)

Instructions

  1. Combine olive oil, honey, soy sauce, lemon zest, parsley, thyme, salt, and pepper in a bowl or resealable bag and mix well.
  2. Reserve 1 tablespoon of the marinade for later use and stir in the garlic.
  3. Add swordfish to the marinade, cover, and refrigerate for at least 30 minutes or up to 8 hours.
  4. Remove swordfish from the marinade and scrape off excess herbs or garlic.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Cook swordfish steaks for 5-6 minutes on each side until opaque.
  7. Brush reserved marinade over the fish and serve immediately with lemon wedges.
