Herb Marinated Grilled Swordfish Steaks

Ingredients

Marinade

  • ½ cup extra virgin olive oil
  • 2 units limes (or lemons), juice
  • 1 unit lime zest (reserved from one lime)
  • 3 teaspoons fresh oregano
  • 3 teaspoons fresh thyme
  • to taste sea salt
  • to taste fresh cracked pepper

Fish

  • 2 pieces swordfish steaks (6-8 oz each)

Instructions

  1. Combine all marinade ingredients in a bowl.
  2. Clean and dry the fish, then marinate for 1 to 3 hours in the refrigerator.
  3. Prepare the grill on high and brush the grates with olive oil.
  4. Place swordfish steaks on direct heat and cook for about 7 minutes per side.
  5. Check that the internal temperature reaches 145 degrees Fahrenheit.
  6. Let the steaks rest before serving.
