Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, chopped celery, chopped carrot, and salt; cook until onions are translucent.
- Stir in chopped garlic and cook until fragrant.
- Pour in chicken broth and crushed tomatoes; bring to a simmer.
- Season with paprika, black pepper, and sugar, then simmer until vegetables are soft.
- Remove from heat and blend until smooth using an immersion blender.
- Return to heat and whisk in ½ cup of warmed heavy cream.
- Adjust seasoning with more salt, pepper, or sugar if needed.
- Ladle into bowls and garnish with a drizzle of cream and chopped basil.
