Ingredients

The base

  • 2 tablespoons unsalted butter
  • 1 tablespoon extra-virgin olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons fresh thyme
  • 1 medium yellow onion, diced
  • 2 stalks celery, diced
  • 2 tablespoons all-purpose flour

The soup

  • 1 28-ounce can crushed tomatoes
  • 2 cups chicken broth or water
  • ½ tablespoon brown sugar
  • 2 teaspoons Italian seasoning
  • to taste salt and pepper
  • cup heavy cream

Garnish

  • to taste minced chives, basil, or parsley
  • as needed croutons

Instructions

  1. Melt butter and olive oil in a large saucepan, then add garlic, thyme, onion, and celery, cooking until soft.
  2. Sprinkle flour over the vegetables and stir until smooth to create a roux.
  3. Add crushed tomatoes, chicken broth, and brown sugar, seasoning with Italian seasoning, salt, and pepper.
  4. Cover and simmer for about 15 minutes, stirring occasionally.
  5. Allow the soup to cool slightly, then blend until smooth and return to the saucepan.
  6. Stir in heavy cream and heat through before serving, garnished with herbs and croutons.
